Just a quick note to let you know that Annette and I had our two sons and their wives over tonight for supper and we made the eggplant parmesian and it turned out great. We bought a puree machine so we also made our own puree and sauce. Your class is the gift that keeps on giving!

Dear Chiara, My wife (Annette) and I are two of the friends of your angel (mike Rongey) who wre with him on our recent trip to Italy. Chiara I must tell you that the time spent with your family was the highlight of our trip. From the cooking all the way until we left you made us feel as though we were life long friends and that your home was our home. It was so much more than a cooking class. As you know the eight of us who were there have been friends for over 30 years yet this was an experience we will always cherish. Not only did we eat, and boy did we eat, but we laughed, we danced and we even cried tears of happiness. Thank you so much for extending our time together. You have a special gift for making people feel at home and your dear mother has a gift of helping us understand what a true Italian household is like. Just to let you know all 8 of us got together last night at our home for dinner and wine (of course) and I made the eggplant rollups. I must say that I was surprised at how good they came out and everyone loved them. We have found a whole new way of cooking and Annette has already made the farmer's sphagetti. We are going to very soon make the eggplant parmesian because as you know that was my very favorite. Thank you for showing us the time of our lives. Keith Muller

I just wanted to let you know what a magnificient time we had a "mama's house" last month. Traveling with the angel was very special. I will be sending you a CD with all of the pictures that I took, as well as some "paper pictures" for mama. Please send me your mailing address.
That day was special. Terry said it best, "Great Food, the musicians, the view, my anniversary and I am surrounded by my great friends on my anniversary. It doesn't get any better than this." Thanks for making it a remarkable day. It truly was a "Window in Time" for all of us.

We arrived home in Ireland to wind and rain on Monday afternoon! It was a big change from the lovely weather we enjoyed in Italy.
I am looking forward to trying some of Mamma Agata’s recipes tomorrow. I have found some tins of Italian cherry tomatoes and Campana Buffalo Mozzarella, so that should be a help.
